I’ve run big races (like the Marine Corps Marathon) and small ones (with 30 or fewer people!). I have to say, I will deleiitnfy pay more to participate if a race is well-organized or has particularly good goodie bags or a high-quality shirt. While a lot of people have pointed out that the bigger events cost more to put on in terms of porta-potties, water/aid stations, etc, it’s equally true that those costs are shared between a lot more people.
